This is a slow cooker recipe.
But don’t go away yet. It really does take less time to make than any other Whip it up Meal I’ve featured on here.
Here’s what you do:
1. Put chicken in crock pot. 2. Rub in a few spices. 3. Pour bbq sauce over chicken. 4. Turn on crock pot. 5. Go about your day. 6. Come back to the most amazing, tender, drool-worthy chicken, stuff it in between some bread, then stuff it in your face.
Crock pots are lifesavers. They really are. Either you turn the crock pot on one lazy Sunday afternoon and enjoy the smell as it slowly drifts to your nose. Or you turn it on before work or a long day out of the house, and then just come home to dinner, ready for you when you walk in the door.
I made this for a girl’s night in this past Monday. My friends absolutely adored this chicken, and when we ran out of sandwich bread, they simply took piles of it and ate it straight with a fork.

Shredded BBQ Chicken Sandwiches (Adapted from Slow Cooker Revolution)
Ingredients:
Prep: 10 minutes Cook: 6 hours
- 2 tsp chili powder
- 1 tsp paprika
- 1/4 tsp cayenne pepper
- 1 1/4 lbs boneless, skinless chicken thighs, trimmed
- 1 1/4 lbs boneless, skinless chicken breasts, trimmed
- 1 1/2 cups barbeque sauce
Directions:
- Mix chili powder, paprika, and cayenne together in small bowl, then rub together over the chicken. Place the chicken into the crock pot, pour 1/2 cup of barbeque sauce over the chicken, and stir to combine.
- Cover and cook for 4-6 hours on low, or until the chicken is tender. (It’s OK to leave it in for longer if you are at work for the day — or if you’re worried about it, set a timer — OR place the chicken into the slow cooker while frozen — leaving it on low for 8-10 hours when frozen will give you the same results as putting it in the crock thawed.)
- Once chicken is cooked, transfer to a separate bowl and shred with two forks.
- Heat 1 cup of the barbeque sauce in the microwave for 1 – 2 minutes until hot. Then stir into the shredded chicken. Add 1 cup of the leftover juice in the slow cooker to the chicken. Stir again.
- Place chicken on whole wheat hamburger buns, and top with extra barbeque sauce and/or shredded cheese.
My Two Cents: I have found my new favorite chicken recipe.
And I’m not exaggerating when I say it’s easier than any other Whip it up Meal I’ve made. Plus, it’s phenomenal and extremely flavorful.
I plan on playing around and expanding this chicken-all-day-in-a-crock-pot-then-shredding-it idea. My sister-in-law said that she puts in a jar of salsa with her chicken in the crock pot and out comes a similar result to this. She said it’s a staple in her house.
I used thighs and breasts for this recipe, but if you want to go all white meat, that will make it a little healthier.
All in all, make this. Just make it.


To make it more “foodie acceptable” you can always make your own BBQ sauce. While they require like 20 ingredients, they’re almost all ones you have around the house. All you have to do is stir them together and heat. SO easy.

In my opinion, this is perfectly “foodie acceptable” with regular old bbq sauce. Plus, this is part of my Whip It Up series, where I think using things like bottled bbq sauce is more acceptable than making homemade.

I used to make pulled pork in the crockpot…no reason to slow roast anything when you’ve got that baby in your kitchen!

This sounds great. The combination of white and dark meat really makes the difference with shredded chicken. I love using my crockpot for meals like this!
Yum! I’ve made lots of soups and stews in my crock pot, but haven’t tried something like this. Sadly, I haven’t yet dragged my crock pot out this winter. Maybe this weekend!
